Fried Polenta with Sun-dried Tomatoes and Basil

Instructions
Slice polenta and fry on the griddle in coconut oil.
Remove polenta slices from heat, spread sun-dried tomato paste on polenta slices.
Top with fresh basil leaf and serve.
