Sweet Potato Dippers with Yogurt Lime Dip
Ingredients
Sweet Potato Dippers
- 4 tbsp sweet potatoes peeled and cut into strips
- 2 tbsp olive oil
- ¼ tsp cumin
- salt and pepper to taste
Yogurt Lime Dip
- 2 c Greek yogurt with honey
- 3 tbsp lime juice
- ¼ c parsley, finely chopped (cilantro would be good too)
- 2 tbsp scallions, minced
- salt to taste
Instructions
Sweet Potato Dippers
- Mix potatoes with oil, salt, and pepper.
- Lay in a single layer on parchment paper-lined baking sheet.
- Roast at 400° F for approximately 25 minutes. (Start with a cold oven.)
Yogurt Lime Dip
- Mix all together. Store in the refrigerator for at least one hour before serving.
