Sweet Potato Dippers with Yogurt Lime Dip

Sweet Potato Dippers

  • 4 tbsp sweet potatoes peeled and cut into strips
  • 2 tbsp olive oil
  • ¼ tsp cumin
  • salt and pepper to taste

Yogurt Lime Dip

  • 2 c Greek yogurt with honey
  • 3 tbsp lime juice
  • ¼ c parsley, finely chopped (cilantro would be good too)
  • 2 tbsp scallions, minced
  • salt to taste


Sweet Potato Dippers

  • Mix potatoes with oil, salt, and pepper.
  • Lay in a single layer on parchment paper-lined baking sheet.
  • Roast at 400° F for approximately 25 minutes. (Start with a cold oven.)

Yogurt Lime Dip

  • Mix all together. Store in the refrigerator for at least one hour before serving.
