Pineapple Mint Salad with Aged Balsamic Vinegar

  • ½-1 fresh pineapple
  • ¼ cup red or Vidalia onion chopped
  • 2 Tablespoon Balsamic vinegar
  • 8 pineapple mint leaves thinly sliced
  • Himalayan salt to taste


  • Chop the desired quantity of pineapple.
    Combine all ingredients and chill for about an hour before serving.

Pineapple Mint Popsicles

  • 2 cups chopped pineapple
  • honey or pineapple mint syrup to taste
  • 1 Tablespoon Pineapple mint finely chopped.
  • ¼ cup water or orange juice
  • ½ teaspoon lemon zest


  • Combine together all ingredients.
  • Pour into popsicle molds and freeze.

Peach and Mint Salsa

Course: Appetizer


  • 1 ½ cups ripe juicy peaches diced small
  • ¼ cup red or Vidalia onions diced small
  • 1 Tablespoon pineapple mint chopped
  • 1 teaspoon Jalapeno pepper chopped and seeded
  • 1 teaspoon Himalayan salt to taste
  • 1 teaspoon Lime juice to taste
  • 1 teaspoon balsamic vinegar optional


  • Combine all ingredients together. Chill and serve!
