Pineapple Mint Salad with Aged Balsamic Vinegar
Ingredients
- ½-1 fresh pineapple
- ¼ cup red or Vidalia onion chopped
- 2 Tablespoon Balsamic vinegar
- 8 pineapple mint leaves thinly sliced
- Himalayan salt to taste
Instructions
- Chop the desired quantity of pineapple. Combine all ingredients and chill for about an hour before serving.
Pineapple Mint Popsicles
Ingredients
- 2 cups chopped pineapple
- honey or pineapple mint syrup to taste
- 1 Tablespoon Pineapple mint finely chopped.
- ¼ cup water or orange juice
- ½ teaspoon lemon zest
Instructions
- Combine together all ingredients.
- Pour into popsicle molds and freeze.
Peach and Mint Salsa
Ingredients
- 1 ½ cups ripe juicy peaches diced small
- ¼ cup red or Vidalia onions diced small
- 1 Tablespoon pineapple mint chopped
- 1 teaspoon Jalapeno pepper chopped and seeded
- 1 teaspoon Himalayan salt to taste
- 1 teaspoon Lime juice to taste
- 1 teaspoon balsamic vinegar optional
Instructions
- Combine all ingredients together. Chill and serve!
