Pickled Daikon Radishes with Carrots

  • 5 cups daikon radishes julienned
  • 5 cups carrots julienned
  • 1 cup sugar
  • 2 tsp salt
  • 2-½ cups apple cider vinegar
  • 2 cups warm water
  • 5 star anise


  • Mix sugar, salt, vinegar, and water together till sugar is dissolved.
  • Mix radishes and carrots, and put in a large jar with a lid.
  • Pour liquid over to cover. Add star anise and stir well.
  • Place in refrigerator for 3 days before serving.
