Pickled Daikon Radishes with Carrots
- 5 cups daikon radishes julienned
- 5 cups carrots julienned
- 1 cup sugar
- 2 tsp salt
- 2-½ cups apple cider vinegar
- 2 cups warm water
- 5 star anise
- Mix sugar, salt, vinegar, and water together till sugar is dissolved.
- Mix radishes and carrots, and put in a large jar with a lid.
- Pour liquid over to cover. Add star anise and stir well.
- Place in refrigerator for 3 days before serving.
