Parsley Salad

Ingredients

  • 2 cups fresh parsley chopped
  • 1 cup cucumber chopped
  • 1 zucchini chopped
  • 1 bell pepper chopped
  • ½ cup onion OR fresh garlic chives chopped
  • Cherry tomatoes
  • salt and pepper

Instructions

  • Mix all. Chill before serving.
  • Note: Winter parsley is not as tender as spring parsley.
