A Cooking Demo with Justin Fox Burks + Amy Lawrence from their newly published Low Carb Vegetarian Cookbook 

Husband-and-wife team Justin and Amy will share how their books came to be and how they incorporate what they grow (herbs, fruit, veg) into their cooking. There are definitely about 15+ must-have culinary herbs that they grow each year.

Justin and Amy will demo their Savory Cheesecake recipe from their new Low-Carb Vegetarian Cookbook: They will run through the ingredients you will need for the recipe and will put it together live, in the end using a swap-out to show the finished dish decorated nicely with herbs.

They will continue the conversation and answer any questions about their gardening, the cookbook writing process, recipe creation, or food photography. They would love to hear how members of the society enjoy using herbs as well!

Justin and Amy are avid gardeners, home cooks, and the authors of the following three books: Low-Carb Vegetarian Cookbook (Rockridge Press, 2020); The Chubby Vegetarian: 100 Inspired Recipes for the Modern Table (Susan Schadt Press, 2016), and The Southern Vegetarian: 100 Down-Home Recipes for the Modern Table (Thomas Nelson / Harper Collins, 2013). They founded The Chubby Vegetarian blog (www.thechubbyvegetarian.com) in 2008.

Justin and Amy write articles about restaurants and home cooking and collaborate on dishes with Memphis chefs and restaurants. In 2013, Justin and Amy were invited to speak and cook at the James Beard Foundation in New York City for the ‘Enlightened Eaters’ series. Their creative take on vegetarian food has been highlighted in The New York Times, The Washington Post, Woman’s Day, The Kitchn, Local Palate, The Huffington Post, The Food Network, Memphis Magazine, Chowhoundokra., and Professional Photographer. They have appeared on TV in The Great Food Truck Race and P. Allen Smith’s Garden Style. Smith wrote the foreword to their second cookbook and visited their home to film two segments for his show.

Outside of creating recipes, Justin is a professional photographer with a photo studio located in South Main in downtown Memphis, and Amy is a middle school English teacher. Currently, they are creating healthy, cancer-fighting recipes for a new book set for 2021 by Chris Wark of Chris Beat Cancer.
