Curried Pickled Eggs
Ingredients
- 1½ c apple cider vinegar
- 1 c cold water
- 2 T mild curry powder
- 1 t turmeric
- 1 t chili flakes
- 1 t peppercorns
- 3 T cane sugar
- 1 t salt
- 2 chilies fresh
Instructions
- Boil a dozen eggs. Cool, peel, and set aside.
- Combine first 8 ingredients in a saucepan. Bring to a simmer till sugar is dissolved. Remove from flame.
- In a large quart canning jar, place chilies and eggs.
- Pour brine over eggs till covered. Put lid on and place in the fridge (or they can be canned). If refrigerated, eggs will be ready in 6 weeks.
