Curried Pickled Eggs

Ingredients

  • c apple cider vinegar
  • 1 c cold water
  • 2 T mild curry powder
  • 1 t turmeric
  • 1 t chili flakes
  • 1 t peppercorns
  • 3 T cane sugar
  • 1 t salt
  • 2 chilies fresh

Instructions

  • Boil a dozen eggs. Cool, peel, and set aside.
  • Combine first 8 ingredients in a saucepan. Bring to a simmer till sugar is dissolved. Remove from flame.
  • In a large quart canning jar, place chilies and eggs.
  • Pour brine over eggs till covered. Put lid on and place in the fridge (or they can be canned). If refrigerated, eggs will be ready in 6 weeks.
