Cabbage and Pomegranate Salad

  • 1 pomegranate
  • 1 lb. cabbage red, green, or a mix


  • 2 Tablespoons canola or olive oil
  • 2 Tablespoon lemon juice
  • salt and white pepper to taste


  • Gently roll the pomegranate on a hard surface to help release the seeds. Cut it open, remove the seeds to a bowl and set aside. Shred the cabbage as you would for coleslaw and place in a large bowl. Make a dressing by mixing the lemon juice, oil, salt, and pepper. Pour the dressing over the shredded cabbage, and massage it gently into the cabbage for a few minutes. Mix the pomegranate seeds into the cabbage, reserving a few to sprinkle over the top.
